Chocolate Oatmeal Pecan Cookies

 

Makes 20 servings

Ingredients:

  • 1/2 cup butter, room temperature
  • 1/2 cup dark brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 cup plus 2 tablespoons flour
  • 1/2 tablespoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups old fashioned oats
  • 1 cup milk chocolate chips
  • 1/3 cup chopped pecans

Instructions:

  1. Combine butter, brown sugar, and sugar in a large bowl with a hand
    mixer until smooth. Beat in egg and vanilla. Set aside.
  2. Combine flour, cornstarch, baking soda, salt, nutmeg, cinnamon, and
    oats in another large bowl.
  3. Gradually add flour mixture to butter mixture, stirring until just combined.
    Stir in chocolate chips and pecans. Cover and chill for 1 hour.
  4. Preheat oven to 325˚F. Line a baking sheet with parchment paper.
  5. Drop dough by tablespoonful onto the prepared baking sheet.
    Chill 10 minutes.
  6. Bake 7–9 minutes. Allow to cool before serving.
